You’ll need:
Dry Ingredients:
1 cup bamboo fiber
1/2 cup whole psyllium husk
1/4 cup egg white powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Wet ingredients:
1 cup egg whites
1 cup warm water
1/2 cup olive oil
2 tbsps apple cider vinegar
Combine wet ingredients, stir in baking powder + baking soda. Next, add the remainder dry ingredients. Hand mix for 10 minutes until batter has thickened. Then pour into a lined bread loaf and make a slit in the batter.
Bake 350° F for 50 minutes. Let cool. Enjoy.

Easy Keto Pie Crust
You’ll need:
- [ ] 1 1/4 cups almond flour
- [ ] 3 tablespoons bamboo fiber
- [ ] 1/4 cup monk fruit sweetener
- [ ] 1/2 teaspoon baking powder
- [ ] 1/2 teaspoon xanthan gum
- [ ] 1/4 teaspoon salt
- [ ] 3 tablespoons unsalted butter, chilled
- [ ] 1 teaspoon vanilla extract
Mix then press into a pie pan.
Preheat oven 350° F then bake 325° F 10 min
Key Lime Pie Filling
Ingredients:
Step 1–Keto Sweetened Condensed Milk Ingredients:
* 3 tablespoons unsalted butter
* 1/2 cup powdered sugar-free sweetener
* 2 cups heavy whipping cream or whole milk
Simmer until thickened
Reduce heat to low and simmer the mixture for 25-30 minutes or until the mixture has thickened and can coat the back of a spoon. Let cool then slowing stir in Step 2.
Step 2:
* 4 teaspoons lime zest
4 egg yolks
* 1/2 cup lime juice (4 limes or 20 key limes)
Assemble the pie
Pour lime filling into baked and cooled pie crust. Bake at 325° F for 15-20 minutes. Bake until edges are slightly set but the center jiggles like jello. Refrigerate for 2-3 hours or until set. Enjoy!

Pizza Crust
You’ll need:
2 cups mozzarella
2 tbsp cream cheese
3/4 cup bamboo fiber
1 egg
(I add garlic powder, onion power, pink Himalayan salt, and a little Italian seasoning)**makes it more flavorful
1.Take mozzarella and cream cheese in microwave safe bowl and melt for 1 minute, take out and stir put back in for additional 30 seconds.
2. Combine egg and almond flour to your mixture; make sure it’s all very well combined
it’s going to be super sticky make sure you have parchment paper on hand to put your ‘dough’ on a piece of parchment paper and get a second piece on top of it so you can roll it out should make a 12” pizza.
3. bake on 425° for 10 mins
4. After crust is to your liking add your sauce and toppings and cook for 10 mins let it sit for atleast 5 mins before cutting it.
Zesty Keto Lemon Bars
INGREDIENTS:
- 1/2 cup butter, melted
- 1 cup almond flour
- 3/4 cup bamboo fiber
- 1 cup powdered erythritol (Swerve!)
- 3 eggs
3 lemons - Salt
INSTRUCTIONS:
For the crust:
- Preheat oven to 350 F.
- Melt butter and mix with 1 cup almond flour, 1/4 cup erythritol, and pinch of salt. Press evenly into an 8×8 baking dish lined with parchment paper.
- Bake for 20 minutes. Cool for 10 minutes.
For the filling:
1. Zest a lemon into a mixing bowl, juice all the lemons, add the eggs, 3/4 cup erythritol, 3/4 bamboo fiber, and pinch of salt and combine.
- Pour the filling onto the crust and bake for 25 minutes.
- Sprinkle with powdered erythritol.
Pancakes
Ingredients:
2 eggs
1/3 cup bamboo fiber
2oz. cream cheese
Instructions:
In a bowl, whisk eggs until bubbles form.
Add in cream cheese and whisk.
Then fold in bamboo fiber and stir to combine.
Use 2 tablespoons of batter per pancake and cook the pancakes for 1-2 minute per side.
